Salty and Sweet Granola
It’s salty, sweet, crunchy, nutty, EASY to make, and delicious with yogurt, fruit, or even solo. Here’s my go-to granola recipe perfect for breakfast, snacking & anytime you’re craving something a little salty and a little sweet.
SALTY & SWEET GRANOLA
Time: 45 minutes // Servings: 12-18
INGREDIENTS
4 cups old fashioned or rolled oats
2 teaspoons cinnamon
1 1/2 teaspoons coarse or flaky sea salt (plus more for topping)
1/2 cup coconut oil, melted
1/2 cup maple syrup
1 tablespoon vanilla extract
1/3 cup brown sugar, lightly packed
3/4 cup raw pecans
1/4 cup raw sunflower seeds
3/4 cup unsweetened shredded coconut
DIRECTIONS
Preheat oven to 325 degrees and line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, mix together oats, cinnamon, and salt.
In a separate bowl, whisk together coconut oil, maple syrup, vanilla and brown sugar until well combined.
Pour wet mixture over the oats and mix until the oats are fully coated. Pour onto the baking sheet and spread into an even layer. Bake for 20 minutes, stirring halfway through.
Remove from the oven and add pecans, sunflower seeds, and coconut. Mix well. Bake for 10 more minutes or until coconut is toasted. (Keep an eye on the coconut as it can burn quickly!)
Top with a little more sea salt and toss one final time. Allow to cool completely and store in an airtight container for up to 2 weeks.
