Easy, Healthy Chicken Salad
I’m a chicken salad aficionado because STL has some of the best there is (Straub’s IYKYK) + my mom’s recipe is hard to beat! This recipe is version of what I grew up with - just a little lighter so I can… eat even more of it! It comes together quickly and is a lunch-time staple at my house!
EASY, HEALTHY CHICKEN SALAD
Time: 10 minutes // Servings: 6-8
INGREDIENTS
meat from 1 whole rotisserie chicken, shredded
3/4 cup grapes (red or green), quartered
3/4 cup celery, diced
1/3 cup almonds, chopped or slivered
1 tbsp dijon mustard
1 cup greek yogurt (sour cream works too)
1 cup mayonnaise (I like a vegan mayo)
Salt and pepper, to taste
DIRECTIONS
In a large bowl, mix all of the ingredients together until well combined.
Serve with crackers, celery, on a croissant - the options are endless!
Store in an airtight container in the refrigerator for up to a week.
