Doughlicious Pupcakes

Our founder Kristen Tomlan's dog Nelly has grown up a member of the team, from a tiny puppy to a full-on meeting contributor and recipe tester. There is tons of research on the benefits of having dogs around from lowering blood pressure to improving self esteem. That's why we also foster dogs from In Our Hand's Rescue. We call our sweet foster pups "Nelly's Interns" and we love giving them lots of affection to prepare them for they're forever homes. (Follow us on Instagram to see our fosters.)
Since dogs do so much for us just by being around, we always like to do something sweet for them when we can. That's where our secret "pupcake" recipe comes in. They bake up quickly and store in the freezer for up to 3 months so it's easy to have them on hand for Nelly, her interns, or any friends that come to visit.
DOUGLICIOUS PUPCAKES
Time: 1 Hour and 30 Minutes // Servings: 12 fur baby cupcakes
INGREDIENTS
1 cup all-purpose flour
1 teaspoon baking soda
1/4 cup coconut oil, melted
1 egg
1/3 cup honey
1/4 cup canned unsweetened pumpkin
1/4 cup apple sauce
1/4 cup peanut butter
For Frosting
1/2 cup plain Greek yogurt
1/4 cup peanut butter
DIRECTIONS
Preheat the oven to 350 degrees. Fit a standard cupcake pan with liners.
Make the pupcakes. Whisk together flour and baking soda. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment or with hand beaters, beat together the rest of the ingredients (coconut oil through peanut butter) on medium until well combined. Scrape the bowl with a rubber spatula as needed.
Add flour mixture in two additions while mixing on low. Your mixture should have the consistency of a very thick batter.
Portion the batter into the 12 cupcake liners and bake for 10 to 12 minutes or until the edges are golden brown and the centers are set. Allow to cool completely.
While pupcakes cool mix together the greek yogurt and peanut butter on high speed until the mixture is fluffy. Transfer to a piping bag or large ziplock bag. When pupcakes are completely cool, cut the tip of the bag and pip on the frosting in a large three tiered dollop.
Top with your pup's favorite treat or a small ball of our doggy dough (sold in the to-go fridge at our flagship location.)
Serve and watch your pup enjoy.
Pupcakes can be stored in the refrigerator for up to 6 days and in the freezer for up to 2 months. To thaw, allow the pupcake to defrost in the refrigerator overnight.
