Corn Salad with Cilantro Lime Dressing
For when you forget that you committed to bringing something to this weekend’s (socially distant) BBQ, I’m bringing you the EASIEST dish for all of your summer gatherings! This salad comes together quickly and is sure to be a crowd pleaser - not to mention it is the perfect vessel for any abundance of fresh tomatoes or cilantro growing in your quarantine garden :)
Corn Salad with Cilantro Lime DRESSING
Time: 30 minutes // Servings: 4-6
INGREDIENTS
For Corn Salad:
2 cans yellow corn, drained and rinsed (or you can use 4 ears of fresh corn, cut off the cob)
1 can black beans, drained and rinsed
1 pint cherry or grape tomatoes, cut in half lengthwise
1/4 cup red onion, diced finely
1 large or 2 small avocados, cubed
For Cilantro Lime Dressing
Juice of 1 lime (about 2 tbsp)
2 tbsp olive oil
1-2 tbsp cilantro (depending on your preference), roughly chopped
1-2 cloves of garlic, grated
1/2 tsp salt
DIRECTIONS
To make salad, drain and rinse corn and black beans. Add to a large bowl.
Add tomatoes and red onion and stir together.
To make dressing, mix together lime juice, olive oil, cilantro garlic, and salt in a small bowl. Pour over corn mixture and let marinate for 1 hour (or longer).
Add avocado shortly before serving and give one final toss
Enjoy as is or you can serve with chips to make it more of a dip!
