Breakfast Banana Bites

Our breakfast banana flavor was an original item when I started the business in 2014. And then they got transformed into breakfast banana bars when we opened our flagship in 2017. And now, they’ve morphed again - into a bite sized version perfect for a morning breakfast on the go. Plus, there’s no added sugar, packed with protein, and they are vegan and gluten free!

BREAKFAST BANANA BITES

Time: 1.5 hours // Servings: About 3 dozen bites, depending on the size

INGREDIENTS

For Bites:

  • 1 cup natural peanut butter

  • 1 cup mashed banana (about 2 large or 3 small ripe bananas)

  • 1/4 cup organic maple syrup

  • 1 tsp salt

  • 1 tsp cinnamon

  • 2 cups gluten free oats, blended into a course meal

  • 1/3 cup almonds, finely chopped

  • 1/3 vegan chocolate chips

For Topping:

  • 1 cup chocolate chips (I used sugar-free vegan chips, but you can use whatever you have)

  • 1 tbsp coconut oil

  • 1/2 cup almonds, chopped

DIRECTIONS

  • Using a whisk or sturdy spatula, mix together peanut butter, bananas, and maple syrup.

  • Add in salt, cinnamon, and gluten free oats and mix until combined.

  • Fold in almonds and chocolate chips.

  • Line a baking sheet with parchment paper. Use a cookie scoop (or spoon) to portion cookie dough, then roll it between your hands to form a smooth ball. Place on baking sheet and freeze for about 30 minutes.

  • In a small microwavable-safe container, microwave the chocolate chip and coconut oil on 50% power in 30-second increments, stirring well between each increment until melted and smooth. Don’t overheat! Let the chocolate mixture cool slightly, about 5 minutes, stirring occasionally.

  • When bites are chilled, dip top half in chocolate mixture, allowing any excess to drip off and then immediately top with crushed almonds. Refrigerate until chocolate is set.

  • Served chilled or at room temperature. Store in an airtight container in the refrigerator for up to 10 days.
